Chocolate mousses are not traditional vegan. Many chocolate mousses are made with cream, eggs, and butter and are not easy to make. Making Julia Child's chocolate mousse, for example, is a delicate art that require lots of preparation time and at least four hours of waiting for the mousse to firm up in the refrigerator. Making vegan avocado mousse is much easier and you can eat it right away. The texture of avocado mousse is more like thick pudding than traditional mousses, but it's easy to make, delicious, and vegan.

Non vegans will appreciate this chocolate recipe as well and most of the time they will have no idea what it's made from.

Removing Avocado Seeds

Removing avocado seeds can be a bit tricky and messy. The easiest way to do it is to, after cutting the avocado in half lengthwise, place the half with seed inside down on a cutting board and bring the knife down into the center of the seed. Once the knife is stuck into the seed, hold the halved avocado still in the palm of your hand and turn the knife slightly. If the avocado is ripe, the seed will pop right out. If the avocado isn't ripe, put the two halves back together and wait a few days before using it. To remove the seed from the knife, place your hand over the blunt side of the knife and pinch the seed with your fingers and thumb. The avocado seed should come right off.

Ingredients for Chocolate Mousse: Makes About Six Small Serving

  • 3 ripe avocados
  • 1/4 cup of cocoa powder
  • 3/4 cup of maple syrup
  • 1/2 tablespoon vanilla
  • 1/2 teaspoon sea salt
  • 1/4 cup vanilla soy or almond milk (1/8 of a cup if you want it thicker)

How to Make Delicious Avocado Mousse

  1. Remove pits and brown spots from avocados.
  2. Spoon ripe avocado out of the peel and place in food processor.
  3. Add cocoa powder, maple syrup, vanilla, and start blending.
  4. Add milk slowly while it blends.
  5. When smooth, chill and serve.
  6. Add more cocoa powder or maple syrup to taste.

Variations

Instead of using cocoa powder and maple syrup, you can melt your favorite 100 g to 200 g dark chocolate (70%) bar in a double boiler and add it to the mixture. When using melted chocolate, the avocado mousse will thicken quite a bit when chilled. It'll be thicker than if you use cocoa powder and maple syrup. Using melted chocolate makes this chocolate recipe a bit more like traditional mousse.

Serve in small bowls with a handful of fresh or frozen blueberries on top.
